Here's a simple recipe to make samosas at home

Samosa is a popular Indian snack consisting of a savory filling, usually spiced potatoes and peas, enclosed in a crispy, triangular pastry shell. Here's a simple recipe to make samosas at home:

Ingredients:

  For the dough:
- 2 cups all-purpose flour (maida)
- 1/4 cup vegetable oil or ghee
- 1/2 teaspoon carom seeds (ajwain)
- Salt to taste
- Water as required

For the Filling:
- 3-4 medium-sized potatoes, boiled, peeled, and mashed
- 1/2 cup green peas, boiled
- 1 medium-sized onion, finely chopped
- 2 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds, crushed
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 2 tablespoons cooking oil
-Fresh coriander leaves, chopped
- Juice of 1 lemon

Others:
Oil for deep frying

Instructions:

  Making the Dough:
1. In a mixing bowl, combine all-purpose flour, salt, carom seeds, and vegetable oil or ghee.
2. Rub the oil into the flour until it resembles breadcrumbs.
3. Gradually add water and knead the mixture into a firm dough. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Making the Filling:
1. Heat oil in a pan. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add ginger-garlic paste and chopped green chillies. Sauté for a couple of minutes until the raw aroma disappears.
4. Add turmeric powder, red chili powder, crushed coriander seeds, and garam masala. Mix well and cook the masala for a minute.
5. Add boiled and mashed potatoes along with boiled green peas. Mix well until the spices are evenly distributed.
6. Add salt to taste and cook the filling for a few more minutes.
7. Remove the pan from heat and let the filling cool down.
8. Once cooled, add chopped coriander leaves and lemon juice. Mix well.

Assembling and Frying Samosas:
1. Divide the rested dough into equal-sized balls.
2. Roll each ball into a thin oval-shaped disk.
3. Cut the disk in half to make two semi-circles.
4. Moisten the straight edge of the semi-circle with water.
5. Fold the semi-circle to form a cone, sealing the moistened edge.
6. Fill the cone with 1-2 tablespoons of the prepared filling.
7. Seal the open edge of the cone by pressing it together with your fingers to form a triangular shape.
8. Heat oil in a deep frying pan or kadhai over medium heat.
9. Once the oil is hot, carefully slide in the samosas one by one.
10. Fry the samosas until they turn golden brown and crispy on all sides.
11. Remove the fried samosas from the oil and drain excess oil on paper towels.

Serve hot samosas with green chutney or tamarind chutney. Enjoy your homemade samosas!
