Ingredients
For Marinating Beef
- 500g beef, cut into cubes
- 1 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- Salt to taste
For Rice
- 2 cups Basmati rice, soaked for 30 minutes and drained
- 4 cups water
- 1 bay leaf
- 4-5 whole cloves
- 2-3 green cardamom pods
- 1-inch cinnamon stick
- Salt to taste
For Biryani
- 3 onions, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup chopped cilantro (coriander leaves)
- 1/2 cup chopped mint leaves
- 4 tablespoons ghee or oil
- 1/2 teaspoon saffron strands (soaked in 2 tablespoons warm milk)
- 1/4 cup fried onions (optional, for garnish)
Instructions
Marinating the Beef
1. In a bowl, combine the yogurt, ginger-garlic paste, chili powder, turmeric powder, ground cumin, and salt.
2. Add the beef cubes to the marinade mixture, ensuring they are well coated.
3. Cover the bowl and let it marinate for at least 2 hours in the refrigerator.
Cooking the Rice
1. In a large pot, bring water to a boil.
2. Add the soaked and drained rice to the boiling water.
3. Add bay leaf, cloves, cardamom pods, cinnamon stick, and salt to the rice.
4. Cook the rice until it is 70-80% done. It should still have a slight bite to it. Drain the rice and set aside.
Cooking the Beef
1. In a large skillet or Dutch oven, heat the ghee or oil over medium heat.
2. Add the sliced onions and sauté until golden brown.
3. Add the marinated beef to the skillet and cook until it is browned on all sides.
4. Add the chopped tomatoes, cilantro, and mint leaves to the skillet. Cook until the tomatoes are softened and the mixture is fragrant.
Layering the Biryani
1. In a heavy-bottomed pot or Dutch oven, spread a layer of the cooked beef mixture.
2. Top the beef mixture with a layer of partially cooked rice.
3. Repeat the layers until all the rice and beef mixture are used up, ending with a layer of rice.
4. Drizzle the saffron milk over the top layer of rice.
5. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes, or until the rice is fully cooked and tender.
Serving
1. Once the biryani is cooked, gently fluff the rice with a fork.
2. Garnish with fried onions (if using) and additional cilantro leaves.
3. Serve hot with raita (yogurt dip) or your favorite salad.
