Here's a basic recipe Making Masala Dosa

Making Masala Dosa involves two main components: preparing the dosa batter and making the potato masala filling. Here's a basic recipe:

   Ingredients

For Dosa Batter
- 1 cup regular rice
- 1/2 cup urad dal (split black gram lentils)
- 1/4 cup fenugreek seeds (optional, for fermentation)
- Salt to taste

For Potato Masala
- 3-4 medium-sized potatoes, boiled and mashed
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Curry leaves (optional)
- Salt to taste
Oil for cooking

   Instructions

1. Prepare the Dosa Batter

1. Rinse the rice and urad dal separately and soak them along with fenugreek seeds in water for about 6-8 hours or overnight.
2. Grind the soaked rice and urad dal separately to a smooth paste using a little water. You may need to add water gradually to achieve the right consistency.
3. Mix the ground rice and urad dal batter together, adding salt to taste. The batter should be of pouring consistency, similar to pancake batter.
4. Allow the batter to ferment overnight or for 8-12 hours in a warm place. The fermented batter should rise and become slightly fluffy.

2. Prepare the Potato Masala

1. Heat oil in a pan and add mustard seeds. Let them splutter.
2. Add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
3. Add chopped onions and green chilies. Saute until the onions turn translucent.
4. Add the mashed potatoes and salt to taste. Mix well and cook for a few minutes until the flavors blend together. Keep aside.

3. Making Masala Dosa

1. Heat a non-stick dosa pan or skillet over medium heat. Once hot, spread a little oil on the pan.
2. Pour a ladleful of dosa batter onto the center of the pan and spread it in a circular motion to make a thin dosa.
3. Drizzle a little oil around the edges of the dosa. Cook until the underside turns golden brown and crisp.
4. Place a portion of the prepared potato masala filling in the center of the dosa.
5. Fold the dosa over the filling to make a semi-circle or roll it up like a wrap.
6. Serve hot with coconut chutney and sambar.
