Here's a simple recipe to make Dhokla
Dhokla is a popular Indian snack originating from the state of Gujarat. It's a steamed savory cake made from fermented rice and chickpea flour batter.
Ingredients:
For the Dhokla Batter:
- 1 cup gram flour (besan)
- 1/4 cup semolina (sooji/rava)
- 1 cup plain yogurt (curd)
- 1/2 teaspoon turmeric powder
- 1 teaspoon ginger-green chili paste
- Salt to taste
- 1 tablespoon lemon juice
- 1 teaspoon fruit salt (eno)
- 2 tablespoons oil
- Water as required
For the tempering:
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1-2 green chillies, slit lengthwise
- A few curry leaves (optional)
- 1/4 cup water
- 2 tablespoons sugar
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves (cilantro)
Instructions:
1.Prepare the Dhokla Batter
- In a mixing bowl, combine gram flour, semolina, yogurt, turmeric powder, ginger-green chili paste, salt, and lemon juice.
- Gradually add water while whisking to make a smooth batter without lumps. The batter should be of pouring consistency.
- Allow the batter to rest for about 15-20 minutes. During this time, the semolina will absorb some moisture and the batter will ferment slightly.
2.Prepare the Steamer
- Meanwhile, fill a steamer or a large pot with water and bring it to a boil. Grease a Dhokla plate or any shallow dish that fits inside the steamer with oil.
3.Add Fruit Salt and Steam
- Just before steaming, add fruit salt (eno) to the batter and mix gently. You'll notice bubbles forming in the batter.
- Immediately pour the batter into the greased plate and place it inside the steamer.
- Steam the Dhokla on medium heat for about 15-20 minutes or until a toothpick inserted into the center comes out clean.
4.Prepare the Tempering
- Heat oil in a small pan. Add mustard seeds and cumin seeds. Allow them to splutter.
-Add slit green chilies and curry leaves. Sauté for a few seconds.
-Add water, sugar, and salt. Bring it to a boil and then turn off the heat.
5.Assemble the Dhokla
- Once the Dhokla is steamed, remove it from the steamer and allow it to cool for a few minutes.
- Cut the Dhokla into squares or diamonds using a knife.
- Pour the prepared tempering over the Dhokla pieces, ensuring they are evenly coated.
- Garnish with chopped coriander leaves.
6. Serve
- Serve Dhokla warm or at room temperature with green chutney or tamarind chutney.
