Here's a basic recipe for making Upma

 
Upma is a popular South Indian breakfast dish made from semolina (sooji or rava). It's flavorful, easy to make, and quite versatile. 


Ingredients:

- 1 cup semolina (sooji or rava)

- 2 tablespoons ghee or oil

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 inch ginger, finely chopped (optional)

- 1-2 green chilies, finely chopped (adjust to taste)

- 1 small onion, finely chopped

- 1/4 cup mixed vegetables (carrots, peas, bell peppers, etc.), finely chopped (optional)

- 2-3 cups water

- Salt to taste

- 2 tablespoons chopped coriander leaves (cilantro), for garnish (optional)

- Lemon wedges, for serving (optional)


Instructions:

1. Roast Semolina

    - Dry roast the semolina in a pan over medium heat until it turns light golden brown and gives off a nutty aroma. Stir constantly to prevent burning. Once roasted, transfer the semolina to a plate and set aside.

2.Prepare Vegetables (if using)

    - If you're using vegetables, finely chop them and keep them ready.

3.Heat Ghee or Oil

    - In the same pan, heat ghee or oil over medium heat.

4. Tempering (Tadka)

    - Add mustard seeds and let them splutter.

    - Add cumin seeds and let them crackle.

    - Add chopped ginger (if using) and green chilies. Sauté for a minute until fragrant.

5.Add Onions and Vegetables

    - Add finely chopped onions and sauté until they turn translucent.

    - If using vegetables, add them now and cook for a few minutes until they are slightly softened.

6. Cook Semolina

    - Pour water into the pan and bring it to a boil.

    - Reduce the heat to low and slowly add the roasted semolina to the boiling water, stirring continuously to prevent lumps from forming.

    - Keep stirring until the semolina absorbs the water and the mixture thickens to a porridge-like consistency. Cover and cook for 2-3 minutes.

7. Season and Garnish

    - Add salt to taste and mix well.

    - Garnish with chopped coriander leaves if desired.

8. Serve

    - Serve hot Upma with a side of lemon wedges for squeezing over the Upma, if desired.


Upma can be customized by adding different vegetables, nuts, or spices according to your preference. It's a delicious and satisfying breakfast option that pairs well with coconut chutney or a pickle. Enjoy your homemade Upma!
