Here's a basic recipe for making Rogan Josh


 


Rogan Josh is a popular Kashmiri dish known for its rich, aromatic flavors and vibrant red color. Traditionally, it's made with tender pieces of meat, usually lamb or goat, cooked with a blend of spices and yogurt. Here's a basic recipe for making Rogan Josh


Ingredients:

- 1 kg (2.2 lbs) lamb or goat meat, cut into cubes

- 3-4 tablespoons vegetable oil or ghee (clarified butter)

- 2 large onions, finely chopped

- 4 cloves of garlic, minced

- 1-inch piece of ginger, grated

- 2-3 green chilies, slit lengthwise (adjust according to your spice preference)

- 2-3 tomatoes, chopped

- 1 cup plain yogurt, whisked until smooth

- 2 teaspoons red chili powder (adjust to taste)

- 1 teaspoon ground turmeric

- 2 teaspoons ground coriander

- 1 teaspoon ground cumin

- 1 teaspoon ground fennel seeds

- 4-5 green cardamom pods

- 4-5 cloves

- 1-inch cinnamon stick

- 1 bay leaf

- Salt to taste

-Fresh cilantro leaves for garnish


Instructions:

1. Heat the oil or ghee in a large, heavy-bottomed pan over medium heat. Add the whole spices - cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for a minute until they become fragrant.

2. Add the chopped onions to the pan and sauté until they turn golden brown.

3. Stir in the minced garlic, grated ginger, and green chilies. Cook for another couple of minutes until the raw smell disappears.

4. Add the chopped tomatoes to the pan and cook until they turn mushy and the oil starts to separate from the masala.

5. Lower the heat and add the dry spices - red chili powder, turmeric, ground coriander, ground cumin, and ground fennel seeds. Mix well and cook for a minute to release the flavors of the spices.

6. Now, add the whisked yogurt to the pan, a little at a time, stirring continuously to prevent curdling. Cook for a few minutes until the yogurt is well incorporated into the masala.

7. Add the cubed lamb or goat meat to the pan and stir well to coat the meat with the masala.

8. Pour in enough water to cover the meat, season with salt, and bring the mixture to a boil.

9. Once it starts boiling, reduce the heat to low, cover the pan with a lid, and simmer for 1.5 to 2 hours or until the meat is tender and the gravy has thickened to your desired consistency. Stir occasionally and add more water if necessary to prevent it from sticking to the bottom.

10. Once the meat is cooked, check for seasoning and adjust if needed. Garnish with fresh cilantro leaves.

11. Serve hot with steamed rice, naan bread, or roti.
