Here's how you can make Pani Puri at home also known as Gol Gappa
Pani Puri, also known as Gol Gappa in some regions of India, is a popular street food snack made of hollow, crispy puris filled with a spicy and tangy flavored water (pani), along with a mixture of tamarind chutney, chickpeas, potatoes, and spices. Here's how you can make Pani Puri at home:
Ingredients
For the Puris (you can also buy ready-made puris from Indian grocery stores):
- 1 cup semolina (sooji)
- 1/4 cup all-purpose flour (maida)
- Water (as needed)
Oil for deep frying
For the water (spiced water)
- 1 cup fresh mint leaves
- 1/2 cup fresh coriander leaves
- 2-3 green chilies (adjust to taste)
- 1-inch piece of ginger
- 1 small lemon, juiced
- 1 teaspoon roasted cumin powder
- 1 teaspoon chaat masala
- Salt to taste
- 2-3 cups chilled water
- 1 tablespoon tamarind pulp (optional)
For the Filling:
- 1 cup boiled chickpeas (chana)
- 2 medium-sized boiled potatoes, peeled and mashed
Tamarind chutney
- Thin sev (fried gram flour noodles)
- Chopped onions (optional)
- Chopped coriander leaves for garnish
Instructions
1. Make the Puris
1. Prepare the dough
Mix semolina and all-purpose flour in a bowl. Add water gradually and knead into a stiff dough. Cover it with a damp cloth and let it rest for 15-20 minutes.
2. Shape the puris
Take a small portion of the dough and roll it into small balls. Roll out each ball into thin circles (about 2 inches in diameter) using a rolling pin.
3. Fry the puris
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully slide into the rolled-out puris one by one. Fry until they puff up and turn golden brown. Remove from oil and drain excess oil on paper towels.
2. Prepare the Pani (Spiced Water)
1. Blend the ingredients
In a blender, combine mint leaves, coriander leaves, green chilies, ginger, lemon juice, roasted cumin powder, chaat masala, salt, and tamarind pulp (if using). Blend into a smooth paste, adding a little water if necessary.

Transfer the blended mixture into a large bowl. Add chilled water and mix well. Adjust the salt and spices according to your taste. Chill the pani in the refrigerator for at least 1 hour before serving.
3. Assemble the Pani Puri:

Mix boiled chickpeas and mashed potatoes in a bowl. Add a pinch of salt and chaat masala for extra flavor.
2. Make a hole in the puris
Gently tap the top of each puri with your thumb to create a small hole without breaking it.
3.Fill the puris
Fill each puri with a small spoonful of the chickpea-potato mixture.
4. Add chutney and sev
Add a little tamarind chutney on top of the filling. Sprinkle some thin sev and chopped onions if desired.
5.Serve
Place the filled puris on a serving plate. Pour the chilled spiced water (pani) into each puri just before eating.
6. Garnish
Garnish with chopped coriander leaves.
