 To make Indian Lacha Paratha, you'll need the following ingredients:

• 2 cups of whole wheat flour (atta)

• 1 tablespoon of ghee or oil

• Salt to taste

• Warm water, as needed

• Extra ghee or oil for frying

Instructions:

1. Prepare the Dough:



• In a mixing bowl, combine the whole wheat flour, salt, and ghee or oil.

• Gradually add warm water and knead the mixture into a soft, smooth dough. The dough should be firm yet pliable.

• Cover the dough with a damp cloth and let it rest for about 15-20 minutes.

2. Divide the Dough:



• After resting, divide the dough into equal-sized portions. Roll each portion into a smooth ball.

3. Rolling the Parathas:



• Take one dough ball and flatten it slightly. Dust it with flour and roll it out into a thin, large circle using a rolling pin.

• Brush the surface with ghee or oil.

• Sprinkle some dry flour evenly over the oiled surface.

• Start making pleats by folding the rolled dough similar to a paper fan or accordion.

• Roll the pleated dough into a spiral, tucking the end underneath. Press gently to flatten the spiral.

4. Flatten the Spirals:



• Gently press the spiral down with your palm to flatten it. Repeat this process for all the dough balls.

5. Rolling the Flattened Spirals:



• Take a flattened spiral and dust it with flour.

• Roll it out gently into a paratha, keeping it thicker than a regular chapati or roti.

6. Cooking the Parathas:



• Heat a tawa (griddle) or a non-stick skillet over medium heat.

• Place the rolled paratha onto the hot tawa.

• Cook for about 1-2 minutes until you see bubbles forming on the surface.

• Flip the paratha and cook the other side. Apply some ghee or oil on this side.

• Press down gently with a spatula to ensure even cooking and browning.

• Cook until both sides are golden brown and cooked through.

• Repeat the process with the remaining dough balls.

7. Serve Hot:



• Serve the hot Lacha Parathas with your favorite curry, raita, or pickle.
