Here's a simple recipe for making Chicken Chow Mein:

 




250g Chow Mein noodles
2 boneless, skinless chicken breasts, thinly sliced
2 tablespoons vegetable oil
2 cloves garlic, minced
1 onion, thinly sliced
1 bell pepper, thinly sliced
1 carrot, julienned
1 cup cabbage, thinly sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
Salt and pepper to taste
Optional: sliced green onions for garnish

Cook the Chow Mein noodles according to the package instructions. Drain and set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast and cook until it's no longer pink and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sliced onion. Stir-fry for about 1-2 minutes until the onion becomes translucent and the garlic is fragrant.

Add the sliced bell pepper, julienned carrot, and sliced cabbage to the skillet. Stir-fry for another 2-3 minutes until the vegetables are slightly tender but still crisp.

Return the cooked chicken to the skillet.

In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil.

Add the cooked Chow Mein noodles to the skillet along with the sauce mixture. Toss everything together until the noodles and vegetables are well coated with the sauce. Stir-fry for another 2-3 minutes until everything is heated through.

Taste and adjust seasoning with salt and pepper if needed.

Once everything is cooked and seasoned to your liking, remove the skillet from the heat.

Serve the Chicken Chow Mein hot, optionally garnished with sliced green onions.
